This recipe for chicken tacos is as simple as crockpot recipes get with literally 2 ingredients. YES- only 2! Let me tell you- it smelled so good in my house today for those short couple of hours! Don’t stop at using this clean eating chicken filling just for tacos- it would also be great in enchiladas, burritos or on top of a salad.
- 4 boneless skinless chicken breasts
- 1 container of fresh salsa
Place all ingredients in the slow cooker and heat on low for 4 hours.
In case you want to freeze your fresh salsa so it doesn’t go bad in the fridge, you can easily combine the salsa and chicken to store in the freezer. Just be sure to defrost the mixture overnight in the fridge prior to placing it in the crockpot.
Allow the chicken taco filling to cool completely prior to putting it in a bag to freeze. This filling would also be great to put into tortillas to make chicken enchiladas or chicken burritos to freeze.
