After making this easy recipe, you will never want to crack open a can of refried beans ever again! Dry pinto beans are added to the crockpot with water, onion, green pepper and seasonings. After 8 hours there is pure clean eating yumminess perfect as a side dish for any of your Mexican-inspired meals. Not only are these beans simple to make, but they are super low cost and freeze well!
Clean Eating Slow Cooker “Refried” Beans (adapted from allrecipes.com)
- 3 cups dry organic pinto beans (rinsed)
- 1 onion, chopped
- 4 cups water
- 2 cups chicken broth
- 2 cloves garlic
- 1 teaspoon pepper
- 1 teaspoon cumin
- 1 teaspoons salt (or to taste)
After rinsing the dry beans, add to the slow cooker with onion, water, chicken broth, pepper and cumin. Cook on high for 8 hours. Add salt to taste. Mash using a handheld mixer.
