This clean eating recipe for Cuban ropa vieja is a delicious blend of shredded beef and a savory tomato sauce. Traditionally served with rice and black beans, it can also be added inside tortillas for a delicious taco.
Ropa vieja means “old clothes” in spanish. It has always been one of my favorite Cuban meals and is best prepared in a crockpot as the slow cooking makes the flank steak perfect to shred.
It is also one of those recipes that tastes better 1-2 days after it is made- so I oftentimes make it the day before!
Be sure not to skip the first step of searing the meat – as it helps seal in the meaty flavor.
- 2-3 lb flank steak
- 1 green pepper
- 1 onion
- 1 cup beef stock
- 1 can tomato paste
- 1 T cumin
- 1 T oregano
- Sear the flank steak in a skillet on medium heat - approximately 4-5 minutes on each side.
- Add the steak to the slow cooker and add remaining ingredients
- Cook 8 - 10 hours on low.
- Half hour prior to the end of the cooking time, shred the meat and add back to the slow cooker.
